Avoid cuts along the lower part of the neck and the face. If possible, deliver the head with the skin intact so we can ensure proper skinning.

Cooling and storage

Cool it down as soon as possible, without freezing it until we have agreed on the next steps. If freezing is necessary, properly protect the skin.
